Ingredients
- 2 # ground beef or chicken
- 1 1/2 # shredded sharp cheddar or a mexican blend
- 20 oz. medium enchilada sauce
- 1 (15 oz.) can corn kernals
- 1 pkg. corn tortillas (about 16)

Preparation
Step 1
Preheat oven to 325.
Brown the meat in a large skillet. Drain off the fat. Add about half of the enchilada sauce and the corn to the meat. Simmer for 10 minutes.
In a large casserole dish (approximately 8-10" diameter and 3" high), layer the ingredients starting with the tortillas, then the meat, then the cheese (there is no need to overlap tortillas). Repeat 2 or 3 times, finishing with a layer of tortillas. Make sure to reserve some of the cheese to sprinkle on top.
Pour the remaining enchilada sauce over the top layer of tortillas, then sprinkle with remaining cheese.
Cover with foil and bake 40 minutes, until the top layer is soft and the cheese is melted.
Serve with Mexican rice and refried beans.
