Mojo Chicken

Ingredients
- 3/4 cup grapefruit juice
- 3/4 cup orange juice
- 1/2 cup white vinegar
- 1 tablespoon lemon juice
- 1/2 a medium-sized onion, chopped
- 2 tablespoons minced garlic
- 1 teaspoon ground cumin
- 1/2 teaspoon dried cilantro
- 2 teaspoons salt
- 6 boneless, skinless chicken breast halves

Preparation
Step 1
In a blender, combine all the ingredients except the chicken; blend until smooth. Reserve 1 cup of the mixture and chill.
Place the chicken in a large glass dish and pour the remaining juice mixture over the top. Cover and marinate in the refrigerator for 2 to 3 hours. Remove the chicken from the marinade, discarding excess marinade, and cook in a large skillet over medium-high heat for 12 to 14 minutes, or until no pink remains and the juices run clear, turning halfway through the cooking.
Meanwhile, in a small saucepan, cook the reserved 1 cup chilled marinade over medium-high heat for 3 to 4 minutes, or until boiling. Remove from the heat and pour over the cooked chicken. Serve immediately.
