  • 2 teaspoons olive oil
  • 1 medium yellow onion, finely chopped (about 1 cup)
  • 1 cup chopped carrot
  • 1/2 cup chopped celery
  • 1/4 cup chopped green onion
  • 1/4 cup chopped mushrooms
  • 2 cloves garlic, mined
  • 1/8 teaspoon dried thyme
  • 2 egg whites
  • 1 cup fresh bread crumbs
  • 1/2 cup reduced-sodium ketchup
  • 1/4 teaspoon salt
  • 1 pound ground turkey
  • 8 ounces lean ground beef

Step 1

1. Preheat oven 375 F. Spray an 8 x 4 inch loaf pan with vegetable cooking spray. Set aside.

2. In a large nonstick skillet, heat oil over medium-high heat. Add vegetables, garlic,, and thyme.k, stirring, until vegetables begin to soften, about 5 minutes. Transfer to a plate; cool slightly.

3. In a large bowl, combine the egg whites, bread crumbs, ketchup, and salt Add turkey and beef; mix just until blended. Add vegetable mixture; mix well. Press into prepared pan.

4. Bake until a metal skewer inserted in center feels warm, about 55 minute. Let stand for 10 minutes. Cut into slice and serve.
