Deli Salad with Avocado Ranch Dressing 1 Picture

Ingredients

  • Salad:
  • 1 head Romaine Lettuce, shredded
  • 2 Chicken or Turkey Breasts (quick fried with salt and pepper and then cubed)
  • 4 slices Pastrami or Beef Fry, cut into strips (fried in a little oil until crispy, drained on paper towel)
  • 2-4 Hard Boiled Eggs, diced
  • 2 lrg or 4 med Cucumbers, sliced
  • Avocado Ranch Dressing:
  • 1/4 cup Mayo
  • 1/4 cup Pareve Sour Cream
  • 1/2 Tbsp Mayo blended with 1/2 Tbsp Lemon Juice
  • 1/4 Avocado
  • 1 1/2 tsp White Vinegar
  • 1/8 tsp Salt
  • 1/8 tsp Dried Parsley
  • pinch Dried Dill
  • 1/8 tsp Onion Powder
  • pinch Garlic Powder
  • pinch Black Pepper

Preparation

Step 1

Use immersion blender to blend all dressing ingredients together until completely smooth.
Layer lettuce, cucumbers, eggs, diced chicken, fried pastrami. Pour on dressing.
