Ingredients

  • 4 skinless chicken breasts
  • 3 large garlic cloves, minced
  • 2 pints cherry tomatoes, halved
  • 10 - 15 large basil leaves, finely chopped
  • 8 oz fresh mozzarella, sliced in 1/2 inch thick slices
  • 2 tablespoons olive oil, divided
  • several sprigs of fresh rosemary for garnish
  • shredded parmigiano reggiano cheese for garnish
  • kosher salt & freshly ground black pepper
  • balsamic vinegar, to taste

Step 1

1. Cut chicken into 2" - 3" rough chunks. (Or leave breasts whole)
2. Salt and pepper chicken and set aside.
3. In a large sauté pan over medium-high heat, warm 1 tablespoon olive oil.
4. Add chicken, cover pan and cook for about 10 minutes or until chicken is cooked thoroughly.
5. While chicken is cooking, in a medium sauté pan over medium-high heat, warm remaining 1 tablespoon olive oil.
6. Add garlic and cook for about 10 minute, or until fragrant.
7. Add tomatoes and continue sautéing until tomato skins start to soften/wrinkle, about 15 minutes.
8. Remove from heat and stir in basil. Set aside.
9. Once chicken has reached desired doneness, pour tomato mixture on top.
10. Top with slices of mozzarella.
11. Cover pan and let mozzarella melt, about 10 minutes.
12. Drizzle with a splash of balsamic vinegar.
13. Garnish with fresh rosemary and serve immediately.
