These little desserts are a yummy snack to have in the morning or anytime you want. When I was a little girl, my grandmother used to always buy Kolackys from a local bakery and my brothers and I would eat them up. These are time consuming to make but well worth the effort.

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 cup cold butter, cut in 1/2 inch slices
  • 1- 8 oz. package of cream cheese, softened, and cut into small pieces
  • Jams and Preserves: strawberry, raspberry, cherry, apricot, lemon

Preparation

Step 1

In a large bowl, combine flour and sugar. Using a pastry blender, cut in butter and cream cheese until mixture begins to cling together (butter should remain in large pieces). Form into a ball with hands and turn out onto a floured pastry cloth.

With floured hands, gently knead dough for 8 strokes. Using a well floured rolling pin, roll dough into a 12x10 rectangle. Fold dough crosswise into thirds to form a 10x4 rectangle. Turn dough and roll out into a 12x10 rectangle. Fold, roll, and fold and roll for a total of three times. Wrap dough in plastic wrap and chill in the freezer for 20-30 minutes until firm, but not stiff.

Grease cookie sheet. Roll dough into a 12 inch square. Cut dough into 36- 2 inch squares. Place on cookie sheet. Press indentation into each cookie with your thumb. Fill indentation with the desired jam or preserves of your choice.

Bake at 400 degrees for 15 minutes or until edges are golden.
