Ingredients

  • 3 tbsp lime juice
  • 1 tbsp orange juice
  • 1 tbsp honey
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1 tsp dehydrated minced garlic
  • 1 tsp dehydrated minced onion
  • 3/4 tsp ground cumin
  • 3/4 tsp oregano
  • 1/2 tsp cilantro leaves
  • 1/2 tsp black pepper
  • 1.5 lb (750g)boneless skinless chicken (can substitute with steak), cut into thin strips
  • 1 medium green pepper,cut in thin strips
  • 1 medium red bell pepper, cut in thin strips
  • 1 medium onion, cut into thin strips
  • 6 flour tortillas

Step 1

In a resealable bag, lime juice, orange juice, honey, oil, spices and salt. Add chicken with marinade turning it to coat well. Refrigerate for 30 minutes or longer for extra flavour.

In large pre-heated skilled stir fry chicken over medium heat until juices run clear. Remove; set aside. Add bell peppers and onion to skillet, cooking until tender (I like to reserve a few tablespoons of marinade to saute the veggies in). Return chicken to skillet.

Spoon chicken mixture into warmed tortillas.

Suggested toppings: sour cream, guacamole, fresh cilantro and a fresh squeeze of lime juice.
