Ingredients

  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound turkey cutlets
  • 1/2 cup fresh basil, julienne-cut
  • 2 Roma tomatoes, seeded and Julienne cut
  • Olive oil cooking spray, as needed
  • 1/4 cup seasoned breadcrumbs
  • Mixed greens
  • Vinaigrette dressing

Preparation

Step 1

In a small bowl combine cheese, Italian seasoning, salt and pepper. Sprinkle mixture evently over one side of cutlets and top with basil. Divide tomatoes equally over cutlets.

Roll the cutlets up, jelly-roll style, to encase tomato and basil mixture. Spray each bundle with olive oil and coat with breadcrumbs.

Place bundles, seam side down, on (14x9x1-inch) baking sheet sprayed with olive oil. Bake at 375F for 20 to 25 minutes or until food thermometer registers 170F and turkey is no longer pink in center. Serve on a bed of mixed greens tossed with the vinaigrett dressing.
