Ingredients

  • 2 cups (326 g) Brown Rice Flour Mix
  • 2/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon xantham gum
  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 cup peeled, chopped apple
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup milk
  • 1/2 cup oil
  • 2 large eggs
  • Streusel Topping
  • 1/2 cup Brown Rice Flour Mix
  • 1/3 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon xantham gum
  • 3 tablespoons unsalted butter, melted

Preparation

Step 1

1) Preheat oven to 375 °F. Position rack in center of oven. Grease muffin pan.

2) Mix flour, sugar, baking powder, baking soda, xantham gum, salt, and cinnamon in large mixing bowl. Add apples and walnuts; stir to coat evenly.

3) Combine milk and oil in small bowl; remove 1 tablespoon of combined liquid and discard it. Beat in eggs. Add liquids to apple mixture and stir until just blended.

4) Fill muffin pans 2/3 full. Top with streusel. Bake 18-25 minutes until light golden. Remove from the pan and serve immediately or cool on a rack.

Streusel Topping

1) Combine flour, brown sugar, cinnamon, and xantham gum in a small bowl; stir to blend. Pour in butter and stir until all dry ingredients are moistened. Break into small pieces with spoon.
