Ingredients
- 1 cup sugar
- 1 cup powdered sugar
- 1/4 tsp salt
- 1 cup margerine, softened
- 2 eggs
- 1 cup canola oil (or other flavorless oil)
- 2 tsp vanilla
- 5 cups flour
- 1 tsp baking soda
- 1 tsp cream of tartar

Step 1
In large stand mixer, mix sugars, salt and margerine. Add and mix in eggs, oil, and vanilla. Add and mix in flour, baking soda and cream of tartar.
Roll dough into balls about the size of a walnut and place on cookie sheet lined with parchment paper for easy clean up. Pour about 1/4 cup of sugar into a saucer. Using a wide bottomed drinking glass, dip glass into sugar and then use to flatten the cookie balls. The thinner the cookies, the lighter and crispier they will be. You may want to sprinkle a little extra sugar on each of the cookies before baking. Bake at 350 degrees for 12-15 minutes until edges are just starting to turn a light brown.
