Ingredients

  • 4 pork chops (1 inch thick)
  • 1/2 pound bulk spicy pork sausage
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • Cinnamon BBQ Sauce
  • 2 table spoons butter
  • 1/4 cup diced sweet onion
  • 1 red delicious apple peeled and coarsely grated
  • 4 table spons bourbon
  • 1/2 teaspoon salt
  • 1/4 cayenne
  • 1/4 cumin
  • 2 cups ketchup
  • 1/2 cup white vinegar
  • 1/2 cup cola
  • 6 tablespoon maple syrup
  • 1 tablespoon molasses
  • 1 tablespoon worcestershire
  • 1 /12 teaspoons Liquid Smoke

Preparation

Step 1

Prepare sauce
Small skillet med heat add butter, when butter is melted add onions saute till soft about 4min. Add Apple bourbon salt cayenne cinnamon, and cumin. Saute for two minutes. Take off heat and set aside.

Place large non reactive saucepan over med heat. Add remaining ingredients. Bring to a simmer cook for 5 minutes. Add apple onion mixture simmer another 2 minutes stirring often. Let cool. may be stored two weeks in fridge.

Chops

Hint: when making room for stuffing, after making slits into middle of chop use your finger to enlarge the cavity

Cut a deep slit in each chop, forming a pocket. Stuff with sausage; secure with toothpicks. Sprinkle chops with garlic powder and pepper. Brush each side with Cinnamon BBQ sauce

Grill, covered, over med heat 5 minutes on each side. Grill 10-15 minutes longer over indirect heat or until meat juices run clear, basting twice with sauce from one bowl. Remove toothpicks. Serve with sauce from the second bowl. Yield: 4 servings.
