Ingredients

  • Marinara sauce:
  • 2 14.5 oz stewed tomatoes
  • 1 6oz can tomato paste
  • 1 TBS dried parsley
  • 2 tsp minced garlic
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 1 tsp sugar
  • 1/2 tsp ground black pepper
  • 2 TBS olive oil
  • 1/2 yellow onion (minced)
  • 1/4 cup red wine
  • 4 cups chicken broth (or beef) (or water, if no broth available)
  • 12 oz frozen mixed veggies
  • 8 oz pasta (ditalini)
  • 12 frozen meatballs (or 8oz sliced Italian Sausage or chicken)
  • 14.5 oz vegetarian broth and garbanzo beans for vegetarian option
  • salt & pepper to taste

Preparation

Step 1

Prepare marinara sauce as directed (see recipe).

Combine sauce and broth in large stock pot. Bring to a boil.

Stir in pasta & meat balls. Boil 7-8 minutes until pasta is tender and meat is cooked through.
