  • 1 lb scallops
  • 12 oz package angel-hair pasta
  • 1 cup mushrooms, sliced
  • 1/2 sweet or yellow onion, chopped
  • 1/2 tomato, chopped
  • 1 Tbsp lemon juice
  • olive oil
  • butter
  • Blackening Spices
  • 1/4 Tbsp salt
  • 1/3 Tbsp white pepper
  • 1 Tbsp black pepper
  • 3/4 tsp dry mustard
  • 3/4 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/8 tsp dried thyme leaves

Directions

1. Mix blackening spices together. Dredge scallops in blackening spices.

2. In skillet, sauté onion in butter. After onions are translucent, add mushrooms. Cook until mushrooms are an edible consistency. Cover and set aside.

3. Boil pasta in water with a touch of olive oil. Cook 4-5 according to instructions on pasta box.

4. Heat butter in skillet and add scallops, cooking on high heat for 6-8 minutes. Cover and set aside.

5. Place pasta in a bowl. Drizzle with olive oil. Add butter, mushrooms, onions, and tomatoes and toss.

6. Serve pasta and place scallops on top.
