Ingredients
- 1 1/2 lbs boneless skinless chicken breast cut into bite size pieces
- 2 large cloves garlic, crushed & chopped
- 1 tbsp chopped fresh thyme or 1/2 tsp dried
- 1 tbsp chopped fresh parsley
- 1 tsp tapioca starch or 1 1/2 tsp cornstarch
- 1 tsp chopped fresh hot pepper
- 2-3 dashes pepper
- 1/2 tsp seasame oil
- 1 tbsp light soy sauce
- 1 tbsp dry white wine
- 2 tbsp veg oil, peanut preferred
- 1 - 1 1/4 tsp salt
- 2 tbsp chopped green onion

Step 1
In a large bowl combine chicken, garlic, thyme, parsley, starch, hot pepper, pepper, seasame oil, soy sauce & wine. Toss together & set aside for 10-15 min.
When ready to cook, heat a large skillet, preferably cast iron or wok until very hot. Add oil & salt. Add chicken mixture & spread evenly over the bottom of the pan. Brown one side then turn mixture & brown other side.
When chicken is golden brown, mix ingredients well with a cooking ladle or spatula. Add chopped green onion, toss briefly, then remove pan from heat. Portion onto plates & serve with beer or a dry white wine such as sauvignon blanc
