Ingredients

  • 2 cup chopped onion (2 large)
  • 4 cloves garlic, minced
  • 1 finely chopped jalapeno pepper
  • 2 Tbsp. olive oil
  • 1 4-oz. can diced green chili peppers, undrained
  • 1 Tbsp. chili powder
  • 1 tsp. dried oregano
  • 1/8 tsp. cayenne pepper
  • 3 15-oz. cans cannellini beans, rinsed and drained
  • 2 14.5-oz. cans salt free chicken broth
  • 5 cup cubed cooked turkey or chicken
  • 1 or 2 handfuls of cooked shells
  • 1 cup shredded Monterey Jack cheese w/jalapeno peppers

Step 1

In Dutch oven cook onions, garlic and jalapeno in hot oil over medium-high heat for 5 or 6 minutes or until onions are tender, stirring frequently. Stir in chili peppers, chili powder, oregano and cayenne pepper, cooking for 1 minute. Mash one can of the beans. Add all of the beans and broth to Dutch oven. Bring to a boil, reduce heat, cover and simmer for 10 minutes.

Stir in turkey. Simmer, covered, about 10 minutes, or until heated through. Serve topped with cheese.

NOTE:
I used 2 cans of shredded chicken. I think I used 1 can of beans and 3 boxes. Good!
