Ingredients
- 3 large, very ripe bananas
- 1/3 cup unsalted butter, melted
- 3/4 cup brown sugar (tightly packed)
- 1/2 teaspoon salt
- 1 large egg, beaten
- 1 1/2 teaspoon vanilla extract
- 1 1/4 cups plain flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon bicarb soda
- 1/4 teaspoon allspice

Preparation
Step 1
Preheat your oven to 175°C and grease a loaf pan.
Peel and puree the bananas until very smooth. Place the bananas in a large bowl and stir in the melted butter.
Add the brown sugar and salt to the banana. Stir with a whisk to break up any lumps, then stir in the egg and vanilla.
In a separate bowl, sift together the flour, cocoa, bicarb soda and allspice. Make sure it is well mixed.
Add the flour mixture to the banana mixture and stir until just incorporated.
Pour the batter into the load pan and bake for one hour. Allow to cool at room temperature for 10 minutes, then turn the loaf out onto a wire rack to cool to room temperature.
