Ingredients

  • Approx:
  • 2 1/2 cups almond meal
  • 1 tsp baking powder
  • 4 eggs
  • 3/4 cup coconut milk or nutmilk
  • Organic butter, coconut oil or grapeseed oil for cooking
  • 1 - 2 bananas
  • 1 1/2 cups blueberries, frozen or fresh
  • Coyo yoghurt or a nice thick greek yoghurt if not dairy free
  • Maple syrup

Preparation

Step 1

Makes: 6 medium sized pancakes, 3 per person makes a good hearty breakfast.

Mix dry ingredients in a large spouted mixing bowl

Blend eggs and yoghurt in a blender then add to dry ingredients

Mix until smooth then let sit for 5-10mins

Cook on a medium to low heat in a good pan.

Place one pancake each on a plate then add sliced banana, a few scattered blueberries, a dollop of Coyo and a drizzle of maple syrup.
