Cookies, Butter Pecan

Rich and buttery, these cookies are great on their own, or fill with chocolate frosting and make sandwiches. Freeze a roll and bake as many or as few cookies as you need.

Ingredients
- 1/2 cup butter
- 1 cup sugar
- 1 egg
- 2 teaspoon vanilla extract
- 1 1/2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped pecans

Preparation
Step 1
Cream the butter and sugar until fluffy. Add egg and vanilla and beat well. Sift the flour, baking soda, and salt into a bowl with the wet ingredients, and mix to combine. Add the pecans, mix well.
Shape into two rolls about 2 inches in diameter and place in a freezer bag.
To Serve:
Preheat oven to 375 degrees F. Remove rolls from freezer bag and slice into 1/4 slices. Place slices and inch apart on a greased baking sheet and bake for about 10 minutes. Remove to a rack and let cool.
