Ingredients
- 4 Boneless Chicken Thighs, cut into small cubes
- 4 Tbsp Oil
- 1 Onion, finely diced
- 2 cloves Garlic, minced
- 4 heaping Tbsp Tomato Paste
- 2 Tbsp Spicy Ketchup or Barbecue Sauce
- 1/4 cup Honey
- 3 Tbsp Vinegar
- 3 Tbsp Soy Sauce
- 2 Tbsp Date syrup, maple syrup or honey
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- Parsley, to garnish

Preparation
Step 1
Saute onion and garlic until well browned. Add the rest of the sauce ingredients and cook covered for 10 minutes, until the sauce comes to a gentle boil.
let the sauce cool and reserve 1/2 cup for serving. Marinate the chicken cubes in the rest of the sauce. Refrigerate for 1-12 hours.
thread the chicken cubes onto skewers. Grill or bake @ 400 for 10 minutes.
Serve with the reserved sauce and a sprinkling of parsley.
