Zucchini Cake

Ingredients

• FROSTING:
• 1 c oil
• 2 c sugar
• 4 eggs
• 2 c flour
• 2 c grated zucchini
• 2 tsp baking powder
• 1/2 tsp cloves
• 1/2 tsp ginger
• 1/2 tsp salt
• 1 tsp cinnamon
• 1 T baking soda
• 8 oz cream cheese
• 1 stick butter
• 1 tsp vanilla
• 2 c powdered sugar

Preparation

Step 1

In large bowl, combine dry ingredients; add oil and eggs-beat to mix.Add grated zuke. Stir to blend. pour into oiled and floured 9x13 baking pan. Bake at 350 for approximately 1 hour.

Frosting
Beat liquid ingredients until light and fluffy. Add powdered sugar. Mix thoroughly.
