It is amazing how bell peppers can make such a great casing for this beef and rice mixture. Feel free to top this meal with mozzarella cheese during the last 15 minutes of cooking.

  • 6 Large Red Peppers
  • 1 lb Ground Beef
  • 1 tsp Sea Salt
  • 1/8 tsp Garlic Salt
  • 1 cup Cooked Instant Rice
  • 1 (15-ounce) Can Tomato Sauce
  • (I would add some chopped onion)

Step 1

Preheat your oven to 350 degrees F.
Cut a thin slice from the stem end of each pepper. Get rid of all of the seeds and membranes from the peppers. Wash the insides and outsides and then cook the peppers in boiling salted water for about 5 minutes. Drain.

Cook the ground beef in a medium skillet until it is browned. Drain off fat and stir in the salt, garlic salt, rice and 1 cup of tomato sauce. Let the ingredients heat through.
Carefully stuff each pepper with 1/2 cup of the meat mixture. Arrange the peppers upright inside of an 8x8-inch ungreased baking dish.

Pour the remaining tomato sauce over the peppers. Cover and bake for 45 minutes. When finished, uncover and bake for an additional 15 minutes. Serve when finished.
