Ingredients
- 2 # boneless chicken breast, cut into slices
- 3 tsp of curry powder
- 2 tsp butter or olive oil
- 1 tbsp mustard seeds
- 1/4 tsp ground cardamom
- 15 oz can diced tomatoes with chilis
- 1 1/2 cup chicken broth
- 1 1/3 cup dried cranberries
- 1 cup fresh cranberries
- 1 tsp chopped fresh ginger

Preparation
Step 1
Sprinkle 3 tsp curry powder over chicken slices. Let sit a few minutes, then lightly brown in olive oil. Don't overcook or chicken will be tough.
Remove chicken from pan.
In two tsp of butter or olive oil brown one onion, diced and the mustard seeds. Cook until they pop.
Add to pan remaining ingredients.
Simmer for a few minutes until well blended and a bit thickened. add chicken until done
serve over rice and add chopped fresh cilantro for garnish.
