  • 2 lbs. ground chuck
  • 1 medium onion, chopped
  • 1/2 cup minced fresh cilantro
  • 1 (1 oz) package taco seasoning mix
  • 1/4 cup tomato sauce
  • 1 large egg
  • 1 cup crushed tortilla chips

Preparation

Step 1

Preheat oven to 350 deg. Line a rimmed baking sheet with aluminum foil.

In a large bowl, combine ground chuck, onion, cilantro, and taco seasoning mix. Add tomato sauce and egg, stirring to combine. Using hands, work in crushed tortilla chips until mixture is combined. Shape into a 10" loaf on prepared baking sheet. Bake for 45 minutes to 1 hour, or until meatloaf is cooked through. Let stand for 10 minutes before slicing.
