Ingredients

  • 2 C Crushed chocolate Wafer Cookies (about 36 cookies)
  • 6 Tbs Butter, Melted
  • 3 (8 oz) Packages of Cream Cheese
  • 1 1/2 C Sugar
  • 1 1/2 C Sour Cream
  • 3 Tbs Flour
  • 3 Eggs, Slightly Beaten
  • 9 Tbs Lemon Juice
  • 3 Tbs Lemon Zest
  • 1 1/2 tsp Vanilla

Preparation

Step 1

Preheat oven to 325 degrees. (Bake on a cookie sheet.)

Line spring form pan with wax paper sprayed with Bakers' Joy.

Combine crushed cookies and butter, press into pan; Bake for 10 minutes. Cool Completely.

Beat cream cheese and sugar until smooth, but don't over beat. Add sour cream and flour. Beat well. Add egg, beat until just combined. STIR in lemon juice, zest and vanilla. Pour over crust.

Bake for 40-45 minutes or until center is almost set. Cool 10 minutes, run knife around the edge. cool another hour. Refrigerate OVERNIGHT. Remove sides of pan.
