Easy Corn Fritters with Spicy Mayo

Ingredients
- 4 ears corn, kernels stripped
- 1/2 red onion, minced
- 2 cloves garlic, minced
- 1 tsp. cayenne pepper
- 2 large eggs, beaten
- 1/4 c. all-purpose flour, plus more if necessary
- kosher salt
- Black pepper
- 1 tbsp. extra-virgin olive oil
- 3 tbsp. mayonnaise
- 2 tsp. Hot sauce

Step 1
In a large bowl, combine corn, onion, garlic, and cayenne and stir together well. Add beaten eggs and stir, then add flour. Season with salt and pepper.
In a large skillet over medium-high heat, heat olive oil. Using your hands, form corn mixture into small patties. (If mixture feels too thin, add more flour, one tablespoon at a time.) Cook fritters until crisp and golden, about 2 minutes, then flip and cook 2 minutes more. Transfer to a paper towel-lined plate to cool.
In a small bowl, stir together mayo and hot sauce. Serve fritters with spicy mayo.
