Bakers Secret Pie Crust

Ingredients
- 3/4 cup cake flour
- 3/4 cup flour
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/8 tsp. baking powder
- 4 tbs. butter
- 5 tbs. Crisco
- 1 egg yolk
- 2 tsp. vinegar
- 3 cubes ice
- 1/2 cup cold water

Preparation
Step 1
Measure butter and Crisco and place in freezer for about 20 minutes.
Measure flours, sugar, salt, and baking powder into food processor and pulse for a few seconds to mix. Take 1/2 of the butter and Crisco and add to processor and pulse for about 1 minute and then add the rest of the fats and pulse very briefly, leaving pea size chunks. In a measuring cup, mix egg yolk and vinegar together, add ice cubes and water. Let this get chilled for 3 to 4 minutes. Remove flour mixture from processor and put into large bowl. Sprinkle 4 to 5 tbs. of this egg mixture into flour and mix gently a little at a time. Do not overmix.
Wrap in plastic wrap and chill for a short while.
Double Recipe for a two crust pie.
