Ingredients

  • 12 lb whole turkey
  • 1/2 cup olive oil
  • 10 frozen garlic cubes
  • 2 tsp dried basil
  • 1 tsp oregano
  • 1 Tbs paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 bottle semi dry white wine
  • 2 granny smith apples,peeled and quartered

Step 1

Preheat oven to 350. Clean turkey and place in pan. In a small bowl,combine olive oil,defrosted garlic cubes,dried basil,paprika,oregano,salt and pepper. Using a basting brush,apply the mixture to the outside of the uncooked turkey and if there is any left over you can rub it with your fingers under the skin. Place the apple in the cavity of the turkey. Pour about 3/4 bottle of wine over the turkey and into the bottom of the roasting pan,then cover the turkey.
Bake for 2 hrs,or until the internal temp of the thickest part of the thigh reaches 180. Remove from oven and let stand for about 30 min before carving. Once the turkey has cooled remove apples and blend it in with the gravy.
For the last half hour,uncover the turkey so it browns nicely. You can also baste it every half hour while it cooks.
