Ingredients
- Marinade:
- 3 cans black eyed peas, drained
- 1 jar (2 oz) diced pimento, drained
- 1 large purple onion, diced
- 1/3 cup vinegar
- 1/3 cup red wine vinegar
- 1/3 cup sugar
- 1/3 cup oil
- 1 3/4 teaspoon ground red pepper
- 1/4 teaspoon salt

Step 1
Rinse peas in cold water, drain well. Pour into bowl. Add pimento and onions and mix.
Combine marinade ingredients in sauce pan and bring to boil. Pour over peas and mix well. Refrigerate for 2-3 days before serving.
