Ingredients

  • 4 cups water
  • 2 teaspoons almond extract
  • 2 cups rolled oats
  • 1/4 teaspoon salt
  • 2 cups chopped fresh peaches or canned peaches in juice, drained and diced
  • 3/4 cup sliced natural almonds
  • 1/4 cup low-fat vanilla yogurt

Step 1

In medium saucepan bring the water and almond extract to boiling; add oats and salt. Reduce heat, cover, and simmer for 5 minutes, stirring occasionally, until water is almost all absorbed. Fold in Peaches and almonds.

Divide among 4 bowls. Top each with 1 tablespoon of the yogurt.
