Ingredients
- 1 tablespoon extra virgin olive oil or unsalted butter
- 1/2 small onion, sliced
- 1/3 pound mushrooms, sliced
- Salt and freshly ground black pepper, to taste
- Balsamic vinegar
- Brown sugar
- 2 Sandwich rolls
- Cheese of your choice
- Sandwich fixings of your choice (lettuce, tomato, onion, etc.)

Step 1
Preheat broiler or toaster oven to broiler setting.
In medium size saute pan, heat olive oil or butter over medium-high heat. Add onion and cook until beginning to brown. Add mushrooms and a pinch of salt and pepper. Cook until mushrooms are soft and have lost their liquid. Add a splash of balsamic vinegar and cook until liquid evaporates. Remove pan from heat. Add a small pinch of brown sugar and stir well. To assemble sandwiches, cut sandwich rolls in half. Pile mushrooms inside, and top with cheese. Place sandwiches under the broiler until the cheese is melted. Top with fixings of your choice.
