Ingredients
- 2 c sweet cherries
- 1 jalapeno, minced
- 1 med shallot, minced
- 1/4 c fresh basil, chopped
- 2 t balsamic vinegar
- Sea salt & freshly ground pepper, to taste
- 4 (6oz) Alaska king salmon fillets

Preparation
Step 1
1. Preheat grill.
2. Pit & chop cherries; combine w/jalapeno, shallot, basil, & vinegar.
3. Taste & adjust seasoning w/salt & pepper.
4. Refrigerate for @ least 1 hr before serving.
5. Grill fillets 10 minutes per inch.
6. Serve w/salsa.
