Ingredients

  • 3 eggs
  • 3/4 cup oil
  • 1 teaspoon cinnamon
  • 3/4 cup Matzoh cake meal
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 2 tablespoons potato starch
  • 1/4 cup matzoh meal
  • 3/4 cup ground walnuts, optional
  • 1 cup mini semi-sweet chocolate chips, optional

Preparation

Step 1

Beat eggs and sugar. Add oil and beat. Add eggs one at a time.
Sift together cake meal, potato starch, salt and cinnamon. Add matzoh meal.
Add dry ingredients to batter. Fold in nuts and chips. Refrigerate one hour or more.
Lightly oil cookie sheet. Shape dough into 3 logs leaving space in between.
Bake 350, 30 minutes until lightly brown.
Cool 10 minutes. Slice diagonally. Turn on side. Bake 225, 30 minutes. Turn off oven and leave in 15 minutes more.
