Ingredients
- 2 c flour
- 1 c brown sugar
- 1/2 c oatmeal
- 1 tsp salt
- 3/4 c melted butter
- 2 c tart apples, diced
- 1 c sugar
- 3 T cornstarch
- 1/4 tsp salt
- 1 c water
- 1 tsp vanilla

Step 1
Mix flour, brown sugar, oatmeal, and salt. Add butter; mix to crumb consistency. Keep 1 cup for topping. Spread rest into 10-inch pie pan. Cover crust with apples.
In saucepan, bring sugar, cornstarch, salt, water and vanilla to a boil, stirring constantly. When thick & transparent pour over apples. Top with remaining crumbs.
Bake at 350F for 40 to 55 minutes or until crust is lightly browned & crunchy.
