This is the ultimate irish recipe for scones. I've made a couple of changes from the recipe in the AAA magazine.

Ingredients

  • 1 stick frozen grated butter
  • 1/2 cup milk
  • 1/2 sour cream
  • 2 cups all purpose flour
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp lemon zest
  • 1/2 cup sugar
  • 1/2 pint blueberries

Step 1

Preheat oven to 425 degrees.
Whisk milk, sour cream and keep chilled until ready to use. Mix flour, baking soda, baking powder, salt, zest and sugar in large bowl.
Add butter and toss with flour mixture until butter is coated. Fold in sour cream and milk mixture.
Lightly flour surface and knead dough about six times. Lightly flour dough and roll out into 12 inch square. Fold in half and half again.
Working quickly, roll out dough in another 12 inch square.Top evenly with blueberries or favorite topping and press lightly.
Roll up the dough and cut into small triangles angle the knife diagonally on the dough. Brush with beaten eggs and sprinkle with sugar.
Place on cookie sheet and bake for 15 minutes or until golden brown.
