Ingredients

  • 1/4 cup oil
  • 1 cup onions, chopped
  • 1 6 oz. can tomato paste
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1/2 teaspoon fresh basil leaves
  • 1 clove garlic
  • Italian plum tomatoes, 2lb 3 oz. can-cut up
  • 1 teaspoon oregano
  • 1/4 teaspoon pepper
  • 2 ricotta cheese, 15. oz. cartons
  • 8 lbs mozzarella cheese, shredded
  • 1/3 cup Parmesan
  • 2 eggs
  • 1 tablespoon parsley
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 zitti noodles, may use mostacelli- large package

Preparation

Step 1

Saute onion and garlic 10 minutes. Add paste, tomatoes 1 1/2 c water and seasoning. Simmer covered 1 hour.
Cook noodles
Put 1/2 sauce on bottom of pan.
Blend last 7 ingredients
Put 1/2 noodles on top of sauce. Then cheese. Repeat.
Add Parmesan after sauce layer on top.
Bake 350 45 min
