Ingredients

  • 3 small racks of lamb
  • olive oil to taste
  • 1 1/2 teaspoons kosher salt
  • I marinated the lamb for several hours in yogurt, olive oil, and garlic. I didn't remove the marinade, just baked it on.

Preparation

Step 1

1. Preheat oven to 450 degrees
2. Place the racks of lamb in a roasting pan, fat side up
3. Rub the tops with olive oil, and sprinkle with salt
4. Roast the lamb for 25 minutes or to 115 degrees
5. Allow the lamb to rest for 15 minutes, covered with foil
