Loaded Potato BBQ Chicken Casserole ✿ 1 Picture

Ingredients

  • 3-4 large baking potatoes, peeled and cut into 1" chunks
  • 2 T. olive oil
  • 1 T. season salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1/4 tsp. paprika
  • 3 large boneless, skinless chicken breast (cut into cubes)
  • 1/2 C. BBQ sauce ( I used cattlemen's Carolina sauce)
  • 4 slices bacon, cooked and crumbled
  • 2 scallions, chopped
  • 1 C. shredded cheddar jack cheese

Preparation

Step 1

Lightly grease a 9 x 13 casserole dish. In a large bowl combine potatoes, oil, season salt, pepper, garlic powder and paprika. Place in the bottom of the dish and bake at 500 degrees for 30 minutes, stirring at 15 minutes. Reduce heat to 400 degrees. In the same bowl as the potatoes, add the chicken and stir to combine with remaining ingredients in the bowl. Add the BBQ sauce and stir. After the potatoes have cooked for a min. of 40 minutes, top with the chicken mixture. Place back in the oven for 25 minutes. Remove and top with cheese, onions and bacon bits. Return to oven for an additional 10 minutes.
