  • 1/3 cup granulated no calorie sweetener
  • 1/3 cup mini chocolate chips
  • 2/3 cup low fat milk
  • 1 large egg slightly beaten
  • 1 tablespoon canola oil
  • 1/4 teaspoon coconut extract
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sliced almonds

Step 1

1. Preheat oven to 350. Spray and 8-inch square baking pan with non-stick baking spray.
2. In a large bowl, combine baking mix, sweetener, and chocolate chips. Stir in milk, egg, oil, vanilla and coconut. Stir until smooth.
3. Pour into prepared baking pan. Sprinkle with sliced almonds. Bake for 12 to 15 minutes, or until the center springs back when lightly touched. Cool for 5 minutes before removing to wire rack
