These are just so chewy and delicious; not like the store bought jaw breakers. My sons love these, very moist, very moreish and low in fat.

Ingredients

  • 2 cups (310g) oats
  • 1 cup (125g) flour
  • 1/2 cup coconut, shredded or desiccated
  • 1/2 cup (90g) brown sugar
  • 1 teaspoon cinnamon
  • 1 1/2 cups diced dried fruit (apricots, sultanas, dates or similar)
  • 1/3 cup (75ml) maple syrup
  • 1/3 cup (75ml) honey
  • 60 g butter
  • 1 tablespoon boiling water
  • 1 teaspoon bicarb soda

Preparation

Step 1

Preheat oven to 180 degrees C and grease a 23x33cm baking tray.
Mix the oats, flour, coconut, fruit, sugar and cinnamon in a large bowl and stir well.
Combine syrup, honey and butter in a microwave safe bowl then heat for 2 minutes on high until butter is melted and becomes thin liquid.
Add in the boiling water and bicarb then stir; it will froth and almost double in size.
Add in the liquid to the dry ingredients and mix to combine.
Pour into the prepared baking tray and using a wet hand press down evenly.
Bake in preheated oven for 15-20 minutes until evenly golden.
Cool in tin and slice into 16 bars.

Chocolate Chips
Do not add chocolate chips to this recipe as they make the mix too wet and it won't set. Instead melt chocolate and drizzle decoratively over the slab before slicing.
