Ingredients
- 4 Hass avocados, skins & pits removed
- 4 tsp. lime juice
- 1/2 tsp. gr. cumin
- 1 pint cherry or grape tomatoes (halved)
- 2 T. olive oil
- 1 tsp. garlic pwd
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 12 oz. jar roasted red peppers (drained, patted dry & diced)
- 1/4 diced red onion
- 1 diced jalapeno pepper
- 4 minced cloves of garlic

Step 1
Toss halved cherry tomatoes with olive oil, garlic pwd, salt, & bl. pepper.
Spread tomatoes evenly over a rimmed baking sheet & roast at 425 degrees
for 15 minutes or until lightly browned.
Stir roasted tomatoes, diced peppers, onion, jalapeno pepper and garlic cloves
into mix of mashed avocados, lime juice and cumin.
