Sweet Potato Patties

Ingredients
- Dipping sauce:
- 1/2 c plain Greek yogurt
- 2 T orange juice
- 1 T honey
- Patties:
- 2 large sweet potatoes (about 1 1/2 lbs)
- 1 1/2 T butter, softened
- 1 1/4 c panko bread crumbs
- 3 green onions, white and light green parts, finely chopped
- 1/2 c toasted pecan halves, finely chopped
- 3 T finely chopped fresh parsley
- 1/2 t salt
- 1/4 t pepper
- Vegetable oil, for frying

Preparation
Step 1
In a small bowl, stir together all the ingredients for the dipping sauce. Cover and refrigerated the sauce until serving time.
Peel the potatoes and chop them into large chunks. Place them in a large saucepan and cover with cold water. Bring the water to a boil, then reduce heat and simmer until potatoes are fork tender, about 25 mins. Drain and let excess water evaporate, about 5 mins.
Transfer potatoes to a med bowl and mash until smooth. Add remaining ingredients to the bowl and mix until well blended.
Shape the mixture into patties (we used 2 T for each). Line a baking sheet with paper towels.
Coat the bottom of a large skillet with oil and warm over med-high heat. Fry the patties in batches until well browned, about 3 mins per side, adding more oil as needed. Transfer the patties to the prepared sheet.
Tip: Keep patties in a 200 degree oven until all are done. Serve warm with dipping sauce.
