Ingredients
- 1/2 cup canned black beans, rinsed and drained
- 2 tblsp salsa
- 1/2 cup finely chopped zucchini
- 4 - 6 -inch corn tortillas
- 2 tbsp shredded cheddar cheese (I will use non-fat to lower the calories and fat intake!)

Preparation
Step 1
Combine black beans and salsa in a bowl, mash with a fork. Stir in zucchini.
Spread half bean mixture over 1 corn tortilla; sprinkle with cheese and top with another tortilla.
Repeat with 2 more tortillas, remaining bean mixture and 2 tbsp more cheese.
In a broiler or toaster oven cook quesadillas 1 minute on each side or until cheese is melted and bubbly.
