Ingredients

  • 4 ounces goat cheese, divided
  • 1 cup Monterey Jack cheese, grated
  • 1/2 cup sharp cheddar cheese, grated
  • 1/2 cup onion, chopped
  • One 15 ounce can gf chili with beans (organic-preferred)
  • One 4.5 ounce can chopped green chiles, undrained

Preparation

Step 1

Preheat oven to 350�F.

Crumble 2 ounces goat cheese and 1/2 cup cheddar cheese on bottom of a 9" pie plate.

In a bowl combine 1/2 cup Monterey Jack cheese, onion, chili, and green chiles.

Spread chili mixture over cheese in pie plate. Sprinkle with remaining half cup of Monterey Jack cheese and 2 ounces goat cheese.

Bake at 350�F for 20 minutes. Let stand for 5 minutes before serving.
