- For the honey chipotle sauce:
- 1 1/4 tablespoons honey
- 2 tablespoons cold unsalted butter
- 1/4 teaspoon sea salt
- 1/4 teaspoon ground chipotle chile pepper
- For the turkey medallions:
- 1 pound boneless, skinless turkey breasts
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon extra virgin olive oil

Preparation
Step 1
1. Warm the honey in a small saucepan over medium heat. Whisk in the butter, being careful not to let the mixture boil. Remove the pan from the heat and add the salt and ground chipotle. Mix well.
2. Cut the turkey breasts into 2-ounce medallions (8 pieces). Pound the medallions with a meat mallet until they're about a quarter inch thick. Season each medallion with the salt and pepper.
3. Heat the olive oil over medium heat in a large sauté pan. Sauté the turkey for 2 to 3 minutes on each side, until it's golden brown. Remove the turkey medallions from the pan.
4. Add the honey-chipotle sauce to the pan and cook it until the sauce has thickened slightly, about 2 minutes.
5. Place 2 turkey medallions on each plate and drizzle them with the honey chipotle sauce.
