  • 3 ounces diced pancetta
  • 2 cups thinly sliced onion
  • 1/4 cup goat cheese, softened
  • 2 tsp minced fresh rosemary
  • 1/2 cup grated Asiago cheese
  • Chopped fresh parsley

Preparation

Step 1

Preheat oven to 450 with a baking stone on bottom rack.

Cook pancetta in a saute pan until crisp; transfer to a paper towel lined plate and reserve drippings. Saute onion in drippings over medium heat. Add 3 to 4 Tbsp water at a time, as needed, to keep onion from scorching. Saute onion until golden brown, about 15 minutes total.

To build pizzas transfer two dough rounds to pizza peel dusted with cornmeal. Divide and gently spread goat cheese amoung dough rounds. Carefully lift dough off peel to make sure it easily releases. Divide rosemary, onion, pancetta and assiago and arrange amoung dough rounds.

Bake pizzas, 2 at a time, until crust is nicely browned, about 10 minutes, then top with parsley.
