Ingredients
- 2 TBSP. olive oil
- 1 1/2 tsp. grated lemon peel
- 1 1/4 tsp. salt
- 1/2 tsp. freshly ground pepper
- 1 tsp. rosemary, crumbled
- 8 red potatoes, quartered (1 1/2 lb.)
- 8 garlic cloves, unpeeled
- 4 medium red onions, quartered
- 1 large red pepper, cut into 3/4" strips

Step 1
Preheat oven to 450 degrees. Combine oil, lemon peel, salt, pepper, rosemary, potatoes, garlic, onions and red pepper in large bowl; toss to coat well. Spread in jelly roll pan.
Roast 40-45 minutes until tender.
