Ingredients

  • 2 TBSP. olive oil
  • 1 1/2 tsp. grated lemon peel
  • 1 1/4 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 1 tsp. rosemary, crumbled
  • 8 red potatoes, quartered (1 1/2 lb.)
  • 8 garlic cloves, unpeeled
  • 4 medium red onions, quartered
  • 1 large red pepper, cut into 3/4" strips

Preparation

Step 1

Preheat oven to 450 degrees. Combine oil, lemon peel, salt, pepper, rosemary, potatoes, garlic, onions and red pepper in large bowl; toss to coat well. Spread in jelly roll pan.

Roast 40-45 minutes until tender.
