Blue Cheese and Dried Fruit Terrine
- 1 pound blue cheese at room temperature
- 8 ounces mascarpone cheese at room temperature
- 1 tablespoon honey
- Freshly ground pepper
- Handful chopped dried apricots, currants, chopped dried figs, chopped pistachios, chopped toasted walnuts or any other combination of dried fruit and nuts
- Rustic country bread or crackers for serving
Mash the blue cheese and mascarpone together with the honey and pepper. Stir in the fruit and nuts. Wrap in plastic and shape into a terrine. Refrigerate for several hours or until firm. Serve with an assortment of rustic country breads or crackers.
