Ingredients
- 2 med golden apples
- 1 tbs lemon juice
- 2 cups cooked whole grain brown rice
- 1/2 cup chopped celery
- 1/2 cup walnuts, chopped
- 1/2 cup raisins or dried sweetened cranberries
- 1/2 fat free mayo
- 3/4 cup nonfat vanilla yogurt
- Spring salad greens (optional)

Preparation
Step 1
1. Wash, core and dice apples. Place apples in a large bowl and toss with lemon juice. Add brown rice, celery, nuts and raisins; toss to combine. In a med bowl, combine mayo and yogurt. Blend well. Fold into rice mixture. Serve over salad greens, if desired.
