Ingredients
- 4 cups cooked chicken---rotisserie is great--discard the skin and bones.
- 1/2 c. diced celery
- 1/2 c. diced onion
- 1/2 c. diced apple
- 1/2 c. shredded sharp cheddar---fat free is great in this.
- 1 c. mayo--low fat or fat free
- 1 Tbsp. rice wine vinegar
- 1/4 tsp. salt
- 1/4 tsp. pepper.

Combine all ingredients and refrigerate for at least an hour for the flavors to meld together.
