Ingredients

  • 1/2 cup extra-virgin olive oil
  • 1/4 cup fresh lemon juice
  • 2 Tbsp minced fresh garlic
  • 2 tap red pepper flakes
  • 16 large shrimp, peeled and deceived, tails left on (1 lb.)
  • 16 each green and red seedless grapes, tossed in olive oil
  • Fresh mint leaves
  • Lemon wedges

Preparation

Step 1

Whisk together 1/2 cup oil, lemon juice, garlic, and pepper flakes in a bowl. Add shrimp to bowl, cover and marinate in the refrigerator, 20 minutes; remove shrimp and discard marinade.

Preheat grill to medium-high. Brush grill grate with oil.

Thread 1 shrimp, 1 green grape, and 1 red grape onto each of sixteen 6-inch wooden skewers. Grill skewers, covered, until shrimp are cooked through, 1-2 minutes per side.
